Step-by-Step Instructions
Step 1: Prepare the Oven and Pan
- Preheat your oven to 350°F (175°C).
- Line a standard muffin tin with paper liners or grease it lightly with cooking spray.
Step 2: Mix the Dry Ingredients
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
Step 3: Combine the Wet Ingredients
- In another bowl, beat the eggs until smooth.
- Add the vegetable oil, vanilla extract, and milk, stirring to combine.
- Fold in the grated zucchini, ensuring it’s evenly distributed.
Step 4: Combine Wet and Dry Ingredients
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
- If using add-ins like nuts, raisins, or chocolate chips, fold them in now.
Step 5: Fill and Bake
- Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
- Bake for 20–25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
