Step-by-Step Instructions
Step 1: Preheat and Prepare
- Preheat your oven to 375°F (190°C).
- Grease a mini muffin tin or line it with mini paper liners.
Step 2: Mix Dry Ingredients
- In a medium mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Step 3: Combine Wet Ingredients
- In a separate bowl, beat the egg lightly.
- Stir in the milk, melted butter, and vanilla extract until well combined.
Step 4: Make the Batter
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix.
- Fold in the chopped cherries to distribute them evenly throughout the batter.
Step 5: Fill and Bake
- Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
- Bake for 12–15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack.
Step 6: Optional Glaze
- In a small bowl, whisk together the powdered sugar, milk, and almond extract until smooth.
- Drizzle the glaze over the cooled muffins for added sweetness and visual appeal.
