Lemon Chia Muffins Recipe: A Refreshing and Nutritious Treat

Step-by-Step Recipe for Lemon Chia Muffins

Step 1: Prepare the Oven and Muffin Tin

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Line or Grease Muffin Pan: Line a 12-cup muffin tin with paper liners or lightly grease each cup to prevent sticking.

Step 2: Mix the Dry Ingredients

In a large mixing bowl, whisk together:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon chia seeds

Step 3: Combine the Wet Ingredients

In a separate bowl, whisk until smooth:

  • 1/2 cup Greek yogurt or sour cream
  • 1/2 cup vegetable oil or melted butter
  • 2 large eggs
  • 3/4 cup granulated sugar
  • Zest of 2 lemons
  • Juice of 1 lemon (about 2 tablespoons)

Step 4: Combine the Wet and Dry Mixtures

  1. Mix the Batter: Gently fold the wet ingredients into the dry ingredients until just combined. Avoid overmixing to keep the muffins light and tender.
  2. Adjust Consistency: If the batter seems too thick, add a tablespoon of milk or more lemon juice for the desired consistency.

Step 5: Fill and Bake

  1. Divide the Batter: Pour the batter evenly into the muffin cups, filling each about 2/3 full.
  2. Bake: Place the muffin tin in the oven and bake for 18–22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  3. Cool: Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
