Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C).
  2. Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2: Combine the Dry Ingredients

  1. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt.

Step 3: Mix the Wet Ingredients

  1. In another bowl, mash the avocado until smooth.
  2. Stir in the crushed pineapple, brown sugar, honey, eggs, vanilla extract, and Greek yogurt until well combined.

Step 4: Create the Batter

  1. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.
